Pinot Noir 2016

BC’s desirable cooler climate showcases world class Pinot Noir. We source ours from two stellar high-bluff vineyard sites on the Naramata Bench with heavier silty soils typical of the area.

The lively bright cranberry notes reveal themselves first and then melts into lovely soft round chocolate cherries. This is a full contact pinot with great structure, engaging tannins and superb potential for aging.

Chardonnay 2017

Creating a well-balanced Chardonnay requires both good judgment and disciplined restraint to fully manifest the fruit characteristics, together with fullness and finesse.

Grapes were sourced from the Naramata Bench and Osoyoos. The grapes were whole cluster pressed for a fresh fruit profile using gravity to settle the wine and then barrel fermented and aged for 8 months in French oak barrels.

Our Nest Egg(s)

Since 2009, David has been working with concrete egg fermenters, particularly for Laughing Stock’s white wine program. 

We’ve learned a few impressive things about these rarities.  For example, their unique oval egg shape contribute to a greater texture and complexity in the wine. All thanks to the convection currents that spontaneously occur during ferments.  This movement automatically stirs the ‘lees’ that would normally settle to the bottom of the tanks.  This in turn, really fills out the mid palate and mouthfeel of the wine. 

Interestingly, while concrete is deemed to be an inert and stable material, David is convinced that using the eggs really adds highly prized minerality notes to the wine. 

So this year, we have confidently doubled our program to a total of 8 concrete eggs fermenters.
